Karantita (also spelled garantita) is one of the most emblematic street foods of northern Algeria, with deep roots in Oran and the Mitidja region. It derives from the Spanish carantita brought by Andalusian immigrants and has been adapted into a distinctly Algerian tradition.

The Dish

Karantita is made from chickpea flour (farine de pois chiche), water, oil, and eggs — poured into a large round tin and baked until set with a golden crust. It is served:

  • As a sandwich — sliced into wedges, placed in a kesra roll with cumin, harissa, and sometimes egg
  • As a plate — with side salad, olives, and bread
